Soufflé egg and runny yolk from Lancheneux’s farm, Mr. Billaut’s asparagus, soy and sesame

Fresh goat cheese from Fay farm cooked like a crème brûlée

Touraine tomme cheese cooked like a cake, wild garlic

MAIN COURSES

Fish of the month and Vichyssoise soup with Za’atar spice blend, Spring greens

Lamb cooked two ways, slow-cooked saddle and spiced confit shoulder, semolina cake, Swiss chard, garlic and shallots sauce with goji berries, lamb broth
