Fresh goat cheese from Fay farm cooked like a crème brûlée
Touraine tomme cheese cooked like a cake, wild garlic
MAIN COURSES
Fish of the month, roasted asparagus with tarragon, baby turnips, blond mustard pickles, sour French sabayon sauce
Soy-glazed pork belly (Roi Rose de Touraine), seaweed-poached langoustines, crispy baby artichokes, lobster bisque and broth with seawater
